Method Making

1.

Heat the oil in the pressure cooker. Add the onion and meat and fry for 3 minutes, stirring, until lightly golden. Add the mushrooms, stock, brown ale, soy sauce, a little seasoning and the bay leaf.

2.

Cover with the lid and bring up to High pressure, then reduce the heat and cook for 20 minutes.

3.

Remove from the heat and reduce the pressure quickly under cold water.

4.

Blend the flour with the water and stir into the meat in the open cooker. Simmer, stirring, for 2 minutes until thickened.Transfer the meat mixture to a large pie dish using a slotted spoon. Put a pie funnel in the centre, if you like. Moisten the meat with as much of the gravy as you like (reserve the remainder to heat and serve separately).
